
It’s not a secret that we all love sweets, isn’t it? I’m always on the hunt for the best recipes that don’t compromise my health. This healthy lemon cake is one of the easiest and quickest ways to satisfy your sweet tooth while also consuming nutritious ingredients that are actually good for you.
The best part? It requires absolutely no equipment and can be prepared in 15-20 minutes max if you have all the ingredients in your cupboards. A busy girl’s paradise, right?
This healthy lemon cake recipe is the perfect match for your coffee or tea and you’ll keep turning back if you try it once. I got the inspiration from @efi_koloverou_dietitian who hands down has the yummiest recipes in her profile and remixed her original lemon cake recipe with a few tweaks to better suit my taste.

The Easiest Healthy Lemon Cake
Ingredients
- 250-300 gr ground almonds
- 150 ml milk of your choice Almond, lactose-free, coconut, etc
- 80 gr honey If you want only natural occuring sugars, you can use dates. Add 6-7 small dates in boiled water for 15 minutes to soften. Once softened, add them into a mixer with a little bit of water to create a paste with a runny texture. Add the date paste into the rest of the recipe as you would with the honey.
- 60 ml olive oil
- 1 egg If you want to go egg-free add 10gr flaxseeds.
- 4 tbsp lemon juice
- 1 tbsp lemon zest
- 1/2 tsp baking powder
- 1/4 tsp baking soda
Instructions
- In a bowl add all the wet ingredients and mix. Olive oil, milk, honey (or date paste), lemon juice, lemon zest and egg (or flaxseeds).
- In another bowl, mix all the dry ingredients. Ground almonds, baking powder, baking soda.
- Then add the dry mix into the first bowl with the wet ingredients and stir again with a spatula.
- Prepare a cake pan by adding baking paper.
- Add in the mixture.
- Bake for 30-35 minutes in 180°C.
- If you want more yuminess, make a frost with greek yogurt, honey and lemon zest and add it on your slice.
